Sa...sa..salad!

 This week's rotation just flew by! Mainly worked in the kitchen with the staff on helping them preparing food for their deliveries/ dine in/ events!

One of our main project in this rotation is to create a salad recipe. I got quinoa as my ingredient! I never had quinoa until last year at my internship when my roommate introduced it to me. Quinoa is like a American rice to me. I really like it though!

My salad is based off this one! I tweaked it by adding corn, asparagus and having my own salad dressing - Lime Vinaigrette. My salad is very fresh with the dressing. The dressing has some dried red pepper flakes so it adds some spiciness to it! I liked it even though I don't like spicy!

I definitely learned a lot from this project. I'm not a big salad person and I thought you could put anything in the salad and would just taste good.... but no not really. There's still some things you have to think about like which produce are in season and they go together, pricing, dressing (within the nutrition content/ thickness...) I learned that you don't have to put oil in your dressing! You can always substitute that with some kinda of puree - some girls pureed squash/ cauliflower etc for their dressing. The taste is definitely different and interesting. 

We had the culinary team to try out our salads and give comments! After all, these salads might be sold in the cafeteria to the students and staff! For me, they didn't have much comments and they actually liked the layout and the flavor :)
